The founder’s record

Locked up.
Leveled up.

Le Cordon Bleu–trained. Cooked at the Faena Hotel in Miami. Then I fell into drugs — using, selling, all of it — and did a year and a day in prison. Inside, an older man handed me a Bible and told me to read Psalm 91 every day. I did. I’ve been clean since, and I’m building this from the ground up, one small batch at a time.

My name’s Ivan Morales — a lot of you know me as Pankeko. Born in Miami, raised most of my life in Nicaragua. Before culinary school, I started a hot sauce company there called Corn Island Sunshine. That was the seed for everything you’re seeing now.

I came back to the U.S., trained at Le Cordon Bleu, and cooked under Chef Paul Qui, including at his restaurant at the Faena Hotel in Miami.

Then I fell into drugs — hard. Selling, using, all of it. I walked away from the kitchen because the money was easier, and eventually it caught up with me. I got arrested and did a year and a day in prison, plus five years probation.

Inside, an older man gave me a Bible and told me to read Psalm 91 every single day. I did. One day I was reading it when a fight broke out around me — chairs flying, chaos everywhere — and I walked away untouched. That was the moment everything shifted.

I’ve been clean since. I got back into kitchens, and now I’m building Convict Cousin Sauce Co. from the ground up. Right now it’s friends and family testing batches. But this is real, and it’s just getting started.
